Am I right to assume that they have two type of drinks, one chocolate and one red fruit and in both they add hibiscus extract?

The pH is for sure neutral given the blue shade of the red fruit drink.

Hibiscus (as well as black currant) contain anthocyanins that becomes blue at neutral pH (and they also change overtime to grey and eventually colorless).

This is the reason why they get a black shade in the chocolate drink (combination of the brown from the chocolate and the blue from the hibiscus) and the blue shade in the red fruit drink.

I am not sure what they did with beetroot mentioned for the Red Fruit, can you please clarify?

 

Is there any heating involved?

 

In any case, I see it very difficult in both cases to cover the hibiscus effect by adding more colors. If you add a white color in the chocolate you will obtain a grey shade. If you add a pink color in the red fruit you will obtain a violet. Since the shade in the Red Fruit is not so intense, it might work with beetroot based product though.
